2 lb. pork roast
Salt and pepper
1 TB chopped fresh rosemary
2 cloves minced garlic
1/4 cup Beach Plum Jelly
Preheat the oven to 375. Meanwhile season the pork roast with salt, pepper, rosemary and garlic. Bake until juices run clear, about forty minutes. (use a meat thermometer to test for doneness) Remove from the oven and put the broiler on. Top the roast with 1/4 cup or more of Beach Plum Jelly and place under the broiler until the jelly browns and carmelizes. Allow to stand for ten minutes before slicing. Use the leftovers to make a delicious sandwich the next day. Serve with mayo and another TB of Beach Plum Jelly along with some lettuce and onion. So delicious! Feel free to substitute any other jelly from the Walters product line!
